Banana and Blueberry Pancakes
For those mornings when you are looking for a treat these pancakes do just the job.
- 1 egg whisked
- 1/2 banana mashed
- 1/2 tsp of cinnamon
- 1/2 tsp of chai seeds (or preferred seeds)
- 1/2 tbsp of olive oil (or preferred oil )
- Hand full of blueberries (reserve halve for topping)
In a bowl add your mashed banana to your whisked egg, mix until combined and then add your cinnamon and seeds.
Heat the oil on a medium heat and then turn down to low and add the batter mix to cover the base of a small frying pan. Once the batter has started to set add half of the blueberries and continue cooking.
Once the pancake if firm enough fold in half to cover all of the blueberries so that your pancake looks a bit like a pasty. Continue cooking until cooked through approx 5-10 mins.
Once cooked pop on a plate and top with the rest of the blueberries, this time I added a drizzle of maple syrup to sweeten it up, but you could add yogurt, honey or a drizzle of dark chocolate.
