Granola

Since a friend introduced me to homemade granola I’ve become addicted to experimenting with different flavour combinations.

Here’s a simple recipe I love, if you like it sweeter add some extra honey.

Ingredients

  • 1 tbsp coconut oil (or your preferred oil)
  • 2 tbsp honey (or maple syrup)
  • 150g oats
  • handful of flax seeds
  • 1 tsp of cinnamon
  • 2 handfuls of nuts chopped – In this recipe I used cashews
  • 1 handful of dried fruit diced if large i.e dates or apricots – In this recipe I used golden raisins

Preheat the oven to gas mark 4 and line a tray with baking paper.

In a medium saucepan,  on  a low heat, melt the coconut oil and honey until the coconut oil has turned liquid to.  Then add the oats, flax seeds, cinnamon and nuts to the same saucepan and combine the ingredients, coating all of the oats.

Once coated transfer the mixture onto the tray spreading it in an even layer and pop in the oven.  After 10 minutes take the tray out and shake the mixture or move around with a spatula, then add the dried fruit and pop back in the over for 5-10 minutes, until the oats are golden.  Keep an eye on the oven as the oats can turn brown suddenly!

Once out of the oven let cool, and either serve on your breakfast yogurt or place in an air tight container until you are ready to eat!
