Banana Honey and Coconut Tray Bake
This definitely counts as a treat but coming in at just 150 calories per slice it can be enjoyed as a mindful treat, and I promise you it is deliciously yummy. Maybe take the rest to work with you to avoid eating them all!
- 125g self-raising flour
- 50g desiccated coconut + extra for dusting
- 100g unsalted butter
- 50g honey
- 100g brown sugar
- 1 mashed banana
- 2 eggs – whisked
Preheat the oven to gas mark 4, line baking tin (20 cm x 20 cm/8 in x 8 in)
Pop the flour and coconut in a large bowl, mix together – if you’ve got time sieve the flour.
In a saucepan melt the butter, sugar and honey on a very low heat, whilst this is melting add the banana and whisked eggs to the flour mix. Once the mixture in the saucepan has melted, allow to cool for a couple of minutes and then add to the flour mixture.
Mix everything together until it’s combined and then pour evenly into the tin, smoothing with a spatula or flat knife. Pop in the oven for 25-30 minutes, until it’s cooked through.
Leave to cool for 30 minutes and then dust with some coconut.
